Banana Split Sundae Cookie

Here's a truly decadent treat that the whole family will enjoy.
  • 1 cup margarine
  • 1 cup packed light brown sugar
  • 1 ½ cups mashed ripe bananas (about 4 medium)
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups rolled oats
  • 2 cups flour
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips
Directions:
  1. Beat margarine and sugar in a bowl until creamy.
  2. Add bananas, egg, and vanilla, beating well.
  3. Mix together in a bowl: oats flour, baking soda, salt, and chocolate chips.
  4. Add to banana mixture. Mix well.
  5. Drop by ¼ cupfuls onto ungreased cookie sheet, 3 " apart. Spread dough into 3 ½" circles.
  6. Bake at 350 degrees 14 - 16 minutes until edges are light golden.
  7. Cool 1 minute on cookie sheet. Remove to wire rack to cool.
  8. Store loosely covered at room temperature.
  9. Top with ice-cream and topping. Makes about 2 dozen.
