Oatmeal Raisin Cookies
1 cup unsalted butter
1 ½ teaspoon vanilla extract
½ cup + 2 tablespoons sugar
2 cups flour
1 cup + 2 tblsp. firmly packed light brown sugar
2 large eggs
¼ teaspoon salt
2 tablespoons water
2 ¼ teaspoons baking powder
½ teaspoon baking soda
3 ¾ cups quick cooking oats
1 ½ cups raisins
Directions:
- Cream butter and both sugars well until light and fluffy.
- Add eggs, water, and vanilla, beat well.
- Add flour, salt, baking soda, baking powder and oats.
- Mix until blended.
- Stir in raisins.
- Chill dough 15 minutes. Drop by tablespoons onto foil-lined cookie sheets.
- Bake at 350 for 10 - 12 minutes. Cookies may not look "done," but be sure not to overbake.
- Cool on foil 1 minute, then transfer to cooling rack. Makes about 3 dozen cookies. Freezes well.
