Strawberry Chiffon Jell-O Mold

A light and refreshing side dish that's perfect for hot summer weather.

  • 12 cup Jell-O mold
  • 3 small packages strawberry Jell-O
  • 2 cups cold water; 2 cups heated water
  • large package frozen strawberries, thawed or 2 pints fresh strawberries, washed, sliced, and sprinkled with 3-4 tablespoons sugar
  • Several whole strawberries reserved for decorating
  • 8 ounce carton Cool Whip

Directions:

  1. Put frozen carton of Cool Whip into refrigerator to soften several hours before starting the Jell-O.
  2. Bring 2 cups water to a boil. Add Jell-O and stir until completely dissolved. Add 2 cups cold water and stir.
  3. Refrigerate until Jell-O starts to thicken (not solid).
  4. When Jell-O is starting to thicken, beat with mixer to aerate.
  5. Add Cool Whip and continue beating the mixture to blend together.
  6. Add strawberries and mix completely.
  7. Spoon into 12 cup mold, cover with plastic wrap, and chill in refrigerator several hours or overnight.
  8. To unmold Jell-O, run a knife all around edges and center. Dip mold into very warm water briefly. Put serving plate over mold and invert onto plate.
  9. Put some reserved strawberries around mold to decorate edges of plate. Return to refrigerator until ready to serve.
